Even if you own multiple platforms, you still have limited free time and attention. So in some ways, deliberately "limiting" yourself to a single platform is a good idea just in terms of curating your library a little more.
Mind you, if you're exclusively a Switch gamer, it'd still be impossible to play everything given the enormity of that library.
I am very conscious that each month I'm missing a ton of incredible content because I simply can't consume everything. Owning multiple platforms can make the anxiety worse, but it also means I can target specific experiences where they are at their optimum as well.
For example, now that I have a gaming PC (after maybe 20 years without one), I can enjoy something like Cyberpunk 2077 "as it was intended" (despite the warts). If I didn't have a gaming PC capable of running it, I'd probably have completely ignored it until the next-gen console version is ready.
Also, side note: although I am fairly omnivorous when it comes to games, I think Nintendo will always be my primary concern. When a new Nintendo game is released (esp. a new Mario or Zelda), I'll tend to prioritise that over absolutely everything else. So, owning multiple platforms doesn't really change that brand/franchise loyalty. :P
